If you have been here since the start of the year you will know that I have battled with myself trying to stick to a healthy eating plan. I know it hasn’t worked out great but something has finally clicked and have stopped the snacking in between meals, cut out all the crap (pardon my french) and Im back on track. I have recently been getting an upset stomach when eating anything dairy, so have cut this out of my diet and have really felt a difference in myself, I think this is what really got me motivated to get my ass into gear. I like simple things, easy things to make that don’t take long until I’m sat down and eating it. I thought it would be a nice idea to share with you some of the healthy dishes I’ve been whipping up, just incase you are in the same stage as me and need things that are going to keep you going. This one is a very very simple one, but such an enjoyable dish. Salmon Noodle Stir Fry.
What you need:
Selection of veg, choose ones that you like the best
Salmon, or meat of your choice
Soya Sauce
Spray Oil
Vermicelli Noodles
What to do:
Cook your Salmon or meat the way you like it, I put mine in the oven wrapped in foil with lemon juice and chilli, I cooked mine for 20 minutes and the flaked it up and fried it in the frying pan. Just because I like mine crispy. Whilst your meat it cooking, chop up your veg and pop it in the wok. Cook your noodles, mine took 3 minutes in a bowl of boiling water, drain once done and pop them in the bowl. Put your Soya sauce in your cooked veg and toss, once this is coated pop your veg on top of your noodles and flake over you Salmon or meat. Easy, Peasy. You’re done.
