I get far too excited when it gets too these holidays! Each one gives me an excuse to bake something yummy up. Although easter also means for that I get to eat at least one hot cross bun each day, is that bad? I don’t know but Im not sure I really care. They re just told delicious. I did think about trying to make them myself but thought I hadn’t quit hit the level of difficulty that it takes to make a hot cross bun. And when I looked at the recipe, quiet frankly it scared the shit outta me. So i’ll just stick to shop bought ones this year. I can however make cupcakes. Cupcakes are my strong point. I could make them until the cows come home. Well not literally but hey!

What you need: 

6oz Caster Sugar
6oz Butter
6oz Self-Raising Flour
3 eggs
Butter
Icing Sugar
Mini Eggs
Dark Chocolate

To make:

Pre-heat the over to around 160(fan). Line your cake tray with cake cases and set aside.

Cream your sugar and butter together until creamy, it will turn from a yellow colour into an off white colour.

Then sift in your flour and egg a little bit at a time until fully incorporated.

Spoon in your mixture into your cases and bake in the oven for around 16 minutes, or until cooked through.

Once done place on a wire tray to cool.

While you wait for the cakes to cool, mix together icing sugar and butter. I dont know how much of each as its honestly just a guessing game. Mix so much then add more icing sugar. Have a cheeky taste once you think there is enough and you will be able to tell if it is too buttery.

Pipe on your icing, chop up the dark chocolate into tiny slithers and place your mini eggs on top. It really is that simple.
