Apple Crumble Cookies

When it comes to this time of year I love all the hot desserts, apple crumble being a top favourite. I was browsing through the new Jamie Oliver 5 ingredient cook book and stumbled upon the Apple Crumble Cookies. And thought shit, you know what. I got to get making these. And thats exactly what I did. Take away a few of the little bumps that came between reading the recipe and actually getting round to making them. They where made Friday afternoon and gone by Saturday night so that’s got to be telling us one thing? They are >delish<

A few little pointers before we jump straight into making it. I know hold yourself back tiger, I’ve got a few little tips for your little butt before you get to the mixing. First things first. Unless you are some kind of perfect person finding the dried apple is going to be tricky. The only place I managed to get my hands on it was in Holland and Barret and to be honest I wasn’t that impressed. I tried a little, as you do, before I started making the cookies and it just didn’t have much flavour. I wanted it to be bursting with flavour of apple. Cause thats what apple crumble is like. So if you can try get some different dried apple then go for it. OR what Im going to try next time is actually dry my own apple. I know ridiculous when you can literally buy it but its just not as strong as I want it. My next pointer is, don’t make the cookies too big. I know we all love the idea of a gigantic cookie but honestly a small one of these is enough, they are super sweet. Which is amazing but a few of mine where just a little too big.

 

Ingredients  :

100g dried apple
200g self-raising flour
100g unsalted butter (cold)
100g golden caster sugar
1 large egg

 

Preheat the oven to 220c, line two trays with baking parchment and rub with olive oil.
whiz the dried apples in a food processor until finely chopped, then add the flour,
cubed butter, sugar and a pinch of sea salt. blitz to a fine crumb for 1 minute, then
remove 3 tablespoons and set aside. pulse the egg until combined. divide into 24 pieces, roll into balls and press down lightly placing them onto the trays. sprinkle over the extra mixture and lightly press into the cookie. bake for 8-10 minutes or until
lightly golden. leave to cool on a wire rack, until you are ready to enjoy.
