Christmas // Rocky Road

I don’t know about you but for me this time of year is all about the yummy treats, having friends and family over and just really over indulging. I mean most of the year I believe you should have yummy treats but especially now. Rocky Road is one of my favourites and ever since I first made this last year at this time I have been dying to make it. Luckily for me, I knew I wanted it to feature on CharlotteSamantha this year because you need to know how to make this, trust me, this meant I had to make this earlier than December so that I could get the post up and also so you had time to make it! That means I got to eat this sooner than I thought I was going to be able too. Ain’t nobody complaining about that. I got my recipe from Nigella Lawsons Christmas book but you can find the recipe online here. Its super simple, I would say the part that takes the longest is the weighing out of the ingredients.

You will need:

 

250 grams dark chocolate
150 grams milk chocolate
175 grams soft butter
4 tablespoons golden syrup
200 grams amaretti biscuits
150 grams brazil nuts (shelled)
150 grams red glace cherries
125 grams mini marshmallows
1 tablespoon icing sugar

Lets get to it:

Step one, Chop both sorts of chocolate small and place in a heavy-based pan to melt with the butter and syrup on a gentle heat.

Step two, Pop the biscuits into a freezer bag and bash them until you get big and small crumbs.

Step three, Put the brazil nuts into a freezer bag and again bash these until you have a different sized rubble.

Step four, Take the pan from the heat, add the crush biscuits and nuts, cherries and mini marshmallows. Turning carefully until everything is coated.

Step five, Tip into a foiled tray smoothing over the top to remove and bubbles.

Step six, Pop it into the fridge until firm enough to cut, this took around 2-3 hours for mine.

Step seven, Push the icing sugar through a small sieve to dust the rocky road.

Step eight, Pop on the kettle and enjoy a slice with a hot cup of tea!
